I'm missing our lazy summer days in that deep, longing way that you might miss a loved one departed on a long trip. Or how you might miss carbs once you've sworn off sugar. Or how you miss the primetime tv lineup when all you have left is reruns. Yep, the days start early and end in oppressive heat. Yesterday, after football practice, I jumped in the pool with all of my clothes on. Sterling thought I had come unglued. But, no, I was just hot.
But good news! Thursday's high in 92. It will be like paradise. Just think.
And the picture? Did you know I'm "supposed" to wear a dress to teach seminary? Mostly I do and then, afterwards, I roam around the house (and grocery store) in dresses and skirts. I try to shower at night, so my hair never lays just right...in the way that slept on hair never does. Also, attempts to apply make up at 5:15 AM are reckless and sporadic, and so...there's me...looking MIGHTY FINE.
But let's not talk about that. Let's talk about dinner. When I sat down to plan my menu for the week I realized I'd be gone (chauffering) three of the four week nights (I don't cook on Friday by order of myself). I was loathe to fire up the olde crockpot because the crockpot screams FALL and LEAVES and APPLE CIDER. And right now, my environment is screaming HOTTER THAN THE SURFACE OF THE SUN. But since the kids are expecting (and probably needing hearty meals) I defied the autumnal nature of the crockpot and planned three crock pot meals. What else can a girl do?
Here's how it went down (and/or will be going down):
Monday: Chili (served with fritos and cheddar). Parker ate two gigantic bowls of chili after football practice. He went to bed well-fed but feeling a little sick. (I can't find the link to this recipe, but if you are in the market for a tasty (yet simple) crockpot chili recipe, e-mail me.)
Tuesday: Our Best Bites French Dip Sandwiches & Watermelon. Just as soon as I finish typing up this blog entry...I'm throwing the roast in the crock pot.
Wednesday: Our Best Bites Chicken Cacciatore. Green salad. Garlic bread.
Thursday: Our Best Bites Fried Rice. This isn't a crock pot meal, but I should be home Thursday evening and available to cook. My kids love this recipe, but I have to double it...because despite their dainty appearance, those girls can pound some food.
Yesterday I did laundry (like six loads), made the menu, shopped for the ingredients, and tidied the house. That was pretty ambitious. Today...I'm aiming much lower...just sayin'.
